interesting...

just checked my stats on my blog. it determined that no one is interested or they are too busy to read my blog. oh well. what a great way to remember what i do... LOL

cory is sick.
i am making soup for dinner.
sheffield soup.

french onion soup
2 cans corn drianed
2 cans black beans drained
ranch style beans
mild enchilada sauce
rotel
2 lb velveeta
garlic
shredded chicken

boil chicken, shred.
mix with all the other ingredients.
once hot, it's ready! yum!

serve with chips, green onions, sour cream... your choice!

A new life.

I started the Dave Ramsey Financial Peace University.

I am excited about learning all that I can, changing my legacy, changing my family tree and paying it forward. I am anxious and I can't wait to get these fundamentals into practice.

10 weeks. That's all. I am ready to start living paycheck to paycheck.

Pray for little Zoey tonight. She got sick earlier. I stopped by to see her and got her to go to sleep. She just got sick again. It's gonna be a long night for Cory.

JDRF Walk

There are a few things that I look forward to in the fall [besides Christmas and Thanksgiving] ... Susan G Komen 5K Walk in October [we missed it this year] and the JDRF 5K Walk in November. This year, I was able to go and Zoey went with me. This was her first walk.
There were several times she wanted to give up [ it was too cold, her legs were too tired, the sun was in her eyes, she was freezing......], but she grabbed my hand and she pressed on!!

It was fun, but a little tough. It is a solid hour of walking and for a little girl, that can be tough. Her friends got rides from the grown-ups, but Zoey and Brooke walked the ENTIRE way... well, we did stop a couple times for apples, bananas...

Good times. Although, she was worn out!

Pumpkins!

Sooooooup!

Cory came over and we made dinner together. He cut up cheese [not cut the cheese] and opened cans of veggies and beans. We had "Sheffield Soup".. I borrowed the recipe from a friend and so that is what we call it. Here is the recipe:

1 can French Onion soup
2 cans corn
2 cans black beans
1 can ranch style beans
1 can mild red enchilada sauce
1 can mild Rotel tomatoes
2 cans chicken, shredded with fork OR boiled chicken breast
2 pounds Velveeta, cubed to melt faster
1 (8-ounce) sour cream
Lots of garlic and pepper/ NO SALT

In a large pot, mix together all ingredients(I drained some of the juices... black beans and I pureed the french onion soup and rotel.. i dont' like chunks), except sour cream.
Once cheese is melted and soup is heated through, mix in sour cream. Garnish with crushed tortilla chips, shredded cheese, green onions and a dollop of sour cream!

Yum... and we have PLENTY of leftovers...

Bacon Wrapped Chicken

Tonight, Cory and I went grocery shopping.

We are having Bacon Wrapped Chicken with Rice, Corn and Texas Toast.

Here is the recipe! Yumm!

Bacon Wrapped Chicken:

4 boneless/skinless chicken breasts - cut each into 3 parts. Set aside.

In large bowl mix 4 oz cream cheese, 1 can of cream of mushroom soup, 1 tbsp Worchestshire, 1/2 cup sour cream

Mix all ingredients together and heat in microwave for 20-30 seconds to soften the cream cheese. Mix well.

Wrap 1 slice of bacon around each chicken piece. (Applewood bacon is good, Jalapeno would have been better).

Place chicken on greased cooking pan. Cover chicken with mixture.

400ยบ for 1 hour.

Then broil for 3-5 minutes to help crispen the bacon (watch this, because I almost charboiled mine)

Viola...Put over a bed of rice, and serve with veggies. Yum.

Firsts...

Lots of "FIRSTS" this weekend....

1. Hibachi Grill - Cory and I went to Samurai Friday night. He had never been to an Hibachi grill before. He was so cute... watching the Chef's every move. He even caught the tossed rice in his mouth. We had a very enjoyable evening.

2. Live Football game - I received some FREE tickets [on the 50 yard line] for the UH vs. Tulane game. We met up with Felipe and hung out with friends. It was H-O-T!!!3. Projective vomit from his girlfriend - I only saw 13 minutes of the game. I got too hot so i went to hang out in the shade. Cory came down to check on me after the first quarter... i stood up and then i started to get light-headed, i started shaking, i started puking... on me, on him. i NOW know how to totally gross out my boyfriend.

Needless to say, I was dehydrated and he has placed me on "House Arrest". I am not allowed to make plans. He has never "managed" me before, ... I kinda like it!

he says he still loves me.... i sure hope so.

Old McDonalds

I promised to take Zoey to McDonalds this weekend. So she woke Cory up at 7:30am and they were at my house by 8:15am......

We got there and then we found a seat.....Zoey was cold...Cory made fun of me for taking pictures... i just told him that he would appreciate them when she is 25 and he misses that little girl!!!
Breakfast was good... even though she wanted french fries and chicken nuggets!!! LOL
She calls it "Old McDonalds"... she got to play after she at almost all her breakfast! It was a nice time for her to get some energy out and time for me and Cory to just talk and enjoy each other...

ice cream cake...

my friend michelle was posting about a marshmellow ice cream cake. it sounded so good that i had to dig up my recipe for my ice cream cake. i just found out that cory doesn't really like marshmellows... so i will keep this recipe on standby.... this is sooo easy. i made it for thanksgiving and a bunco night. doesn't take long and it is delicious!

What You Need

1/2 cup Hot fudge ice cream topping, warmed
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
8 OREO Cookies, chopped (about 1 cup)
12 vanilla ice cream sandwiches

POUR fudge topping into medium bowl. Whisk in 1 cup COOL WHIP. Add dry pudding mix; stir 2 min. Stir in chopped cookies.

ARRANGE 4 ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; top with half the COOL WHIP mixture. Repeat layers. Top with remaining sandwiches. Frost top and sides with remaining COOL WHIP. Bring up foil sides; double fold top and ends to loosely seal packet.

FREEZE 4 hours or until firm.

yep. it is what it sounds like. next sunday, is the day Cory and I first met.
we are going to spend the weekend together and we have something special planned for sunday morning, September 5th. it is gonna be a great week!

fun with friends

well, today was very successful at work. my employees are amazing and they were very hard. they don't stop when they reach their goals... they are so excited to meet them and exceed every single expectation we put before them. they are all very lovely ladies [inside and out!] i a proud to be their boss and i am very thankful for them!
tonight we had dinner with the Ward family. Stephen cooked some chicken on the grill, we brought salad with all the fixings, and chelsea made the starches... it was hilarious because she really wanted to make some veggies and we suggested corn... so we had corn, mac and cheese and potatoes!!!! yum! i thought it was funny when i made zoey's plate and it was all orange....

it is so nice to have friends that have the same values and priorities. i find it comforting to have someone [besides my awesome family] to share struggles and prayer requests and fell safe and secure that they really have my best interest in mind.

zoey and mili play so well with each other. chelsea always does a great job of giving the girls a bath and it makes it nice and easy to get zoey home and in bed.

Happy Birthday Brookie!!

Well, today was Brooke's birthday. I have so many fun memories with that girl. She always has been and always will be my best girl.

I didn't get to meet Brooke on her birthday in 2002. I was at T-Camp on Team Hogg teaching new Aggies the ropes at Texas A&M. I had a team of 6 girls with me screaming and hooping and hollaring when we got the word that she was born. I love her with all my heart.

This is the first time I got to hold her... August 27, 2002...
We had a small gathering of family [and Angela, our adopted family of course] This is her cake that her mom made. I don't really like cake, so I had ice cream. It was fun for sure.

yep, it's a tuesday...

today was BUSY to say the least!
WORK WORK WORK!!!!
then...
1. i got my hair did. finally, the gray is gone but sadly, not for long. why does it come back so quickly?!?!
2. i closed my jewelry show. i got $150 in free jewelry. i am so pumped about that.
3. i spent the evening with cory and zoey. seems to be my life. can't wait until we are a family.
4. played 3 games of go fish and then switched to memory. zoey is sooo good at it.5. watched "Flushed Away" or as Z calls is Flushed in the Toilet... LOL sooo funny... also after dinner, she busted out with some Letter Factory song about the A and the T coming to the C to make cat... and then some P words including popcorn... i am sure my sister knows that that all means...

oh my goodness.

it took me forever to find my blog. not a good thing. i have been up to quit a bit of things. i will show you by uploading some photos. then, i am planning to do this daily. really.

1. spending time with zoey. she is 4 and just starting pre-school. She is learning how to use her manners and how to read. she is precious and i just love being part of her life.
2. hanging out with cory... yep, that is what i do. everyday. i wouldn't trade it for the world. we are almost at the 1 year mark. at times it seems so quick and then there are days that seem like i have always been with him!
3. my work peeps are amazing... just look at us! it has been an adjustment from the high school, but i love the new responsibilities and all the new things i am learning!4. planning baby showers.... Jen, Nicole, Kayce, Melissa, myself and Eilene threw one heck of a baby shower for april. it was a couple shower with beer, margaritas and lots of chicken and sausage. it was fun playing washers and betting on the baby "football" pot!

Wineries.... oh yeah!


we are going to the gandy reunion. this is a weekend that I love!!!!!!! i get to see family and enjoy the town of fredericksburg!

we are going to a couple wineries on the way to fredericksburg.
we are going to luckenbach. hooray! i think walker will love this.
then we will check into the hotel and just hang out for a while. i will make sure to bring monopoly deal.then saturday... dominos and cards, etc. good times!

Cooking...

I made a new recipe Tuesday night. It was Creamy chicken enchiladas. it was basically the same ingredients as king ranch chicken BUT i added enchilada sauce and rolled the mix in flour tortillas... it was delicious. Ask Cory... he made a happy plate!

Tonight, I tried something new... Tater tot Casserole. i made a few changes... i will post the recipe as I made it..... it was simple. i am testing it out on his parents tonight...nervous.

Ingredients

  • 2 pounds tater tots, thawed
  • 1 (10.5 ounce) can condensed cream of chicken soup [i also used cream of mushroom blended up in the blended so there were no misc. mushroom pieces]
  • 1 cup finely chopped onion [i used onion powder on my chicken]
  • 1 (16 ounce) container sour cream [i only used 8 oz]
  • 1 (8 ounce) package sharp Cheddar cheese, shredded
  • 1 dash garlic powder
  • 1/2 teaspoon seasoning salt
  • 1/2 cup butter, softened [ i didn't use butter]
  • 3 cups cornflakes cereal [i used cheeze-its!!!!!]
  • 1/2 cup butter, melted [no butter was used in the making of this casserole]
  • 2 tablespoons grated Parmesan cheese [ i used shredded!!]
  • paprika to taste [nope.. didn't use this]
  • ADDED 2 chicken breasts [ boiled and shredded. boys need meat for every meal]

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch casserole dish.
  2. Cook tots on cookie sheet for 15 minutes. [I like them crispy]
  3. Layer tots on bottom of greased dish. [i laid them like this for fun and i had time. not required]
In a large mixing bowl combine soups, sour cream, cheese; mix well.
  • Place chicken on top of tater tots.













  • Transfer mix to casserole dish on top of everything else.
  • Top with cheeze-its. Sprinkle the top with parmesan cheese (use more or less according to your taste).
  • Bake in preheated oven for 45 minutes to 1 hour, or until browned. (Note: It's a good idea to put a cookie sheet under the casserole dish, in case it bubbles over while cooking.)

Wedding.... [not mine]

This weekend Chelsea Hall got married. She met Stephen last November '08 when i had to go to the bathroom and we stopped by Cullen's where he worked. He thought she was beautiful. She thought he was funny and charming.... the rest..... is history!
