Birthday Celebration

My boyfriend is wonderful.
I am in love.

Saturday, we went to Cafe Adobe with a few friends.And family.
And little ones.
And the boy!

It was lovely. The service was wonderful [especially since they take reservations].

Cooking...

I made a new recipe Tuesday night. It was Creamy chicken enchiladas. it was basically the same ingredients as king ranch chicken BUT i added enchilada sauce and rolled the mix in flour tortillas... it was delicious. Ask Cory... he made a happy plate!

Tonight, I tried something new... Tater tot Casserole. i made a few changes... i will post the recipe as I made it..... it was simple. i am testing it out on his parents tonight...nervous.

Ingredients

  • 2 pounds tater tots, thawed
  • 1 (10.5 ounce) can condensed cream of chicken soup [i also used cream of mushroom blended up in the blended so there were no misc. mushroom pieces]
  • 1 cup finely chopped onion [i used onion powder on my chicken]
  • 1 (16 ounce) container sour cream [i only used 8 oz]
  • 1 (8 ounce) package sharp Cheddar cheese, shredded
  • 1 dash garlic powder
  • 1/2 teaspoon seasoning salt
  • 1/2 cup butter, softened [ i didn't use butter]
  • 3 cups cornflakes cereal [i used cheeze-its!!!!!]
  • 1/2 cup butter, melted [no butter was used in the making of this casserole]
  • 2 tablespoons grated Parmesan cheese [ i used shredded!!]
  • paprika to taste [nope.. didn't use this]
  • ADDED 2 chicken breasts [ boiled and shredded. boys need meat for every meal]

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch casserole dish.
  2. Cook tots on cookie sheet for 15 minutes. [I like them crispy]
  3. Layer tots on bottom of greased dish. [i laid them like this for fun and i had time. not required]
In a large mixing bowl combine soups, sour cream, cheese; mix well.
  • Place chicken on top of tater tots.













  • Transfer mix to casserole dish on top of everything else.
  • Top with cheeze-its. Sprinkle the top with parmesan cheese (use more or less according to your taste).
  • Bake in preheated oven for 45 minutes to 1 hour, or until browned. (Note: It's a good idea to put a cookie sheet under the casserole dish, in case it bubbles over while cooking.)

Wedding.... [not mine]

This weekend Chelsea Hall got married. She met Stephen last November '08 when i had to go to the bathroom and we stopped by Cullen's where he worked. He thought she was beautiful. She thought he was funny and charming.... the rest..... is history!

Relay for Life

Anyone you know have/had cancer?

Then I encourage you to get involved in the American Cancer Society's Relay For Life. You raise money by having fun. Selling snacks, dunking booths, luminaries in honor if those battleing cancer and in memory of those who are gone.

Last year my boss had just been diagnosed with cancer, this year she walked the first lap as a survivor!




What an opportunity to teach young people that giving time and money to a good cause is something they should do fir the rest of their lives!


Sure, we make t-shirts and have days we get to wear jeans, but the ultimate reward is seeing the cancer world make another break through!



These are 3 of my employees. I challenged them to continue being a part of something good when the leave for college this summer. Give back!



How early is to early to learn to be part of something bigger than yourself?!

I encourage you to run a 5k or donate change at mcdonalds or spare some personal tv time for time at the food bank. Get your family, or friends, or co workers together and start making a difference in someones life!
