Exploding Chicken Taquitos
I know, it's been a while. I made a quick dinner tonight. If you have only 15 minutes, make these and serve with some spanish rice [i used uncle bens 90 second rice and it was awesome.] and you won't be disappointed...
HG's Exploding Chicken Taquitos [these are fairly low calorie but Cory didn't miss it!]
Ingredients:
8 small (6-inch) yellow corn tortillas
One 9.75-oz. (or 10-oz.) can 98% fat-free chunk white chicken breast in water, drained well
1/2 cup salsa
1/3 cup shredded fat-free cheddar cheese
1/4 tsp. dry taco seasoning mix
Optional: red enchilada sauce, additional salsa, fat-free sour cream, for dipping
Directions:
Preheat oven to 375 degrees.
In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes. [this allows the flavor to soak in.]
Remove chicken mixture from the fridge, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.
Dampen two paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.
Take one tortilla (keep the rest between the paper towels), spray both sides lightly with nonstick spray, and lay it flat on a clean dry surface.
Prepare a baking sheet by spraying with nonstick spray.
Spoon about 2 heaping tbsp. of filling onto the tortilla. Spread it evenly across the entire surface, and roll tortilla up tightly, so that you have a cigar-shaped tube. Repeat with remaining tortillas and filling.
Bake for 14 - 16 minutes, until crispy. Allow taquitos to cool for 5 minutes. If you like, dunk in enchilada sauce, salsa, or sour cream!

My week in Review

Monday - Cory, myself and Zoey went to have breakfast at Cracker Barrel. We had a great time. After that we were going to go to the park, but the weather was a little less than stellar, let's face it, the weather was for the birds. Everything was cold and wet and that wouldn't be a very fun time at the park. We decided to go home and watch Despicable Me. It's such a cute movie.
After the movie, we decide to take a nap. Zoey and I bunk in the bottom bunk and Cory up top. 4 hours later, Cory comes in and wakes us up. We were both sick and running fever. Zoey had wet the bed and me!! I went home to shower. Come back to his house. Run 103 fever.
Let's just say... no fun!
I took of on Tuesday, Zoey stayed home and Cory tried to figure out how to care for 2 sick girls at 2 different houses.... let's just say it wasn't easy.
We both went to the Doctor, i had bronchitis and zoey had strep. i am still coughing and zoey seems to be fine even though she only made it to school one day last week.
I am feeling better. Today, we went to a birthday party in Spring at a Bouncing Bear place. I think we have decided to have a party like this for Zoey. She will LOVE it.
Well, I hope this week is better... I have to work late monday and tuesday, but i get off early the rest of the week! I am going to work real hard and try to meet some goals by month end.
Church was good today. It was nice to hear an encouraging word. I loved that my family was all together and i love to hear cory and mom sing the songs! good day.

Friday!!
Today was a day like many others. I woke up late, rushed to get ready for work and hurried Maverick along as he was looking for a place to potty.
Work dragged by. Early lunches tend to make the day stretch. I drove to a park and settled in to watch some tv and listen to nature.
Talked to Cory. I mentioned that the park might be a good place for a wedding ceremony. He agreed.
Work got busy, phone went crazy and before we knew it, 6:00pm had arrived.
I headed to Cory's house and we waited for Larry to get home with dinner. It was chicken from Kelleys. It was delicious! I know I told you this already, but thanks for dinner!!
Now I am hiding under covers in the room, Cory and Zoey are playing Elefun. It's my life. I love it.

love. true love.

It's the 13th day of the year! I am in love! I am so excited about the things that will happen this year, memories that will be made!
Cory will finish school.
Zoey will start school. Kindergarten!!! Ahhhh!
I will stay out of school!

interesting...
just checked my stats on my blog. it determined that no one is interested or they are too busy to read my blog. oh well. what a great way to remember what i do... LOL
cory is sick.
i am making soup for dinner.
sheffield soup.
french onion soup
2 cans corn drianed
2 cans black beans drained
ranch style beans
mild enchilada sauce
rotel
2 lb velveeta
garlic
shredded chicken
boil chicken, shred.
mix with all the other ingredients.
once hot, it's ready! yum!
serve with chips, green onions, sour cream... your choice!

A new life.
I started the Dave Ramsey Financial Peace University.
I am excited about learning all that I can, changing my legacy, changing my family tree and paying it forward. I am anxious and I can't wait to get these fundamentals into practice.
10 weeks. That's all. I am ready to start living paycheck to paycheck.
Pray for little Zoey tonight. She got sick earlier. I stopped by to see her and got her to go to sleep. She just got sick again. It's gonna be a long night for Cory.
Thanks friends, good night!
